Niue grown organic vanilla pods are brought to New Zealand for extraction. For a full flavoured extract this process cannot be hastened.
The texture of the liquid changes as the extraction matures, becoming slightly viscous and syrupy.
A major quality of vanilla is to smooth flavours, primarily those of egg and milk in custards, sauces and ice cream.
For first time use, measure the quantities your recipe states, and subsequently the strength can be adjusted to your taste.
